I cannot believe it is Christmas eve - I finished work earlier this week and Scott finally finished work on Thursday. We are spending Christmas at Scott's parents home with Scott's sister, Jen and her boyfriend, Simon as well as Nana , Great Auntie Joyce and Granpa Alex.
We have decorated the lounge tastefully and now we are all looking forward to the next few days of spending time together enjoying each other's company and some delicious food prepared by my amazing mother-in-law, Brenda and both Scott and I will be assisting her in the kitchen.

A night of murder on the Trans-Siberian Express
A few weeks ago, we hosted a Murder Mystery evening...the scene was set on the Trans-Siberian Express in the 1930's.
We invited 6 friends of ours and sent them a invitation with all the details of their characters that we chose for them to be for the evening. We had a Russian General, the General's wife, a Chinese Ambassador, Geisha girl (spy), old wise Chinaman, his daughter (another spy), a British Major and his secretary.
The host manual gave us tips on how to manage the evening and also menu suggestions but as we didn't like their suggestions, so we chose to serve:-
Starters:-
Smoked salmon with cream cheese with cavier on bellini'S
Main Course:-
Beef stroganoff with crunchy potatoes
Dessert:-
Apple and Toffee Crumble with custard
Between courses, we had to read extracts from each of the character guides and exchange information that was relevant at certain times of the evening.

Jane Eyre
Last week, one of my colleagues organised a ladies night and as she knew that we were keen to see the latest film of Jane Eyre, she booked tickets at her local cinema in Belper.
We all managed to leave work at about 10 minutes before close of business so that we could ride in convoy to the cinema. As I didn't know the area, so I drove in the middle and I just relieved that we weren't separated in the traffic.
The cinema is open to the public and one can purchase a membership but it is not part of a chain. It only has one screen and has a lovely feel to the place. There is a bar available that offers alcoholic and non-alcoholic drinks as well as tea, coffee and cake is also available.
The cinema was packed despite Jane Eyre have been on the circuit previously.
We had fantastic luxurious seats in the back row - what a pleasure!!
I have always wanted to read the book but never got a chance and it was never part of my coursework at school but I did have a vague idea of what the story was about.
I was instantly drawn to Jane's character and the strength that she portrayed at such a tender age. Then there is Mr Rochester who is the older, stern man that sees her as his equal despite their age gap. I have to say that I fell in love with Mr Rochester despite his dismissive manner.
I felt myself longing for them to be happy and for Jane not to have any further heartache in her life! Therefore, when she is dragged to the alter, only to have her wedding ceremony interrupted by Mr Rochester's brother-in-law advising that the ceremony cannot be conducted as Mr Rochester was married 15 years previously and remains married.
A devasted Jane is taken to the room where Mr Rochester's mentally unstable wife has been occupying in Mr Rochester's home which is located away from the rest of the household. Only Mr Rochester and one of his servants knew and had access to that room.
Early, the following morning, Jane runs away from Mr Rochester and the life that she once loved but takes ill and ends up on the doorstep of a young minister. The young minister and his sisters nurse her back to health and when she has recovers, she tells them her name is Jane Elliot.
Jane starts a new chapter of her life but still longs for Mr Rochester....
It is a beautiful, moving story of love and the challenges one person has overcome throughout her life and the strength that she finds within herself.
The locations that were used in the film were breathtaking and we are so lucky to live in such a beautiful country!

Alicante
A few weeks ago, I attended the Annual Conference in Alicante, Spain. In the past, only the Advisers of the firm attended the conference, however, this time the invite was extended to all the support staff.
We all met up at the East Midlands Airport for our 6.40 am flight to Alicante in the bar.
Once we landed in Spain, it took us about an hour to board the bus that was going to take us to the conference centre. Instantly you could notice the difference in the weather as we left a very wet and cold England and arrived in sunny, dry Spain.
Thank god the conference centre was air-conditioned and we received the warm welcome as we were greeted by a local Spanish lady with refreshments and a fantastic tapas lunch.
So after a long day (as I had been up since 2.00 am), the delegates were transported to the Melia Hotel where our luggage would be waiting for us in our rooms.
Finally after standing in queues waiting to check in, it was my turn - unfortunately, I was not so lucky as I was told that they did not hold a reservation for me under either my Maiden Name nor my Married Name.
Then I suddenly realised that my luggage is missing...I was at breaking point as all I wanted to do was go to my room, have a shower and a quick nap. There was 3 of us that were in the same boat.
After about an 1 hour, it turned out that my luggage was in my room but the Spanish were unable to spell my Married Name so created a new surname for me.
Once I arrived in my room, I discovered that not only did I have my own luggage but I also had someone else's luggage as well - plus my room was, in fact, an Executive Suite with a private bar for all the guests on that floor, jacuzzi bath/shower with a free mini bar. The view was incredible as I looked out on to the beach and the castle on the hill.
So after a long overdue bath in my jacuzzi bath, I joined my colleagues at the Buffet Dinner only an 1 hour and half late so I missed the pre-dinner drinks and the speeches.
After a delicious dinner, a few of us decided that we would go out for a night on the town and headed to the Coyote Bar for a bit of dancing and plenty of drinks were flowing.
At about 3 am, a few of us were keen to go to the Casino but when we got to the Casino we were told that we required some form of identification so we had to return to the hotel to get our passports.
My one of my bosses decided that he would run down the corridors of our hotel floor and knock on random doors hoping that I wouldn't notice him doing this and when the people opened their doors, they would think it was me but I quickly realised what he was doing so I immediately started run after him so that I won't be caught.
However, some of my colleagues hadn't noticed what he was doing and when they walked down the corridor, a couple of the guests shouted at them.
We spent about an hour at the Casino on the Roulette and Black Jack tables. I don't mind gambling but I also don't like to lose so I only play with 10 Euros.
After the Casino, a few of us decided to go to a nightclub, as we weren't quite ready for bed.
By the time, we stumbled to the hotel, it was about 5.30 am.
Earlier in the evening, I was told that if I didn't want to go to the conference on the 2nd day, I could relax and do what I like so when I woke up, I joined one of our Advisers on the beach as he was suffering from a major hangover. However, before joining my colleague on the beach, I did get a chance to have breakfast in bed....nothing better than having someone to bring you breakfast in bed.
After a few hours on the beach, I returned to my hotel room to do some work and then spend the rest of the afternoon pampering myself for the gala dinner.
The gala dinner was at a different location so we decided to all meet up in the private bar for drinks prior to getting on the buses. By the time, the rest of us met up, you could see who were still suffering from the previous night's antics. However, I was feeling on top form despite only having a few hours of sleep.
Once we arrived at the gala dinner, it looked like we had stepped out on a set from a James Bond movie. The dinner was held out under the stars in front of the restaurant and we were not far from the water's edge. It was a beautiful evening and I managed to watch the sunset as the moon rose from behind mountains. It was a perfect setting.
The 14 of us were split across 2 tables and I was definitely on the table that had more fun as the conversations were very revealing in a cheeky / naughty manner - definitely a good icebreaker for all of us as we had other people on our table that we did not necessarily see or speak to on a daily basis.
After the gala dinner, we returned to the hotel but decided that the night was still young so we went to the Coyote Bar. One of the Advisers decided to jump on one of the tables and dance but the foot of the table gave away and he landed with his nose on the beer bottle - luckily he didn't break any bones or get glass in his eyes but he did have a rather ghastly gash on his nose so there was blood everywhere.
At 4 am, I decided that I needed to go back to the hotel and pack my case and get some rest as we were going to check out at 12 pm that day.
I woke up at 11 am and missed breakfast but managed to get my stuff together and check out by 12 pm.
We spent the rest of the day having a relaxing paella lunch at a restaurant that overlooks the harbour. After lunch, we did our only thing, some went to the beach, others went for a walk.
Our flight was only at 9 pm so we had a leisurely day in Alicante and then a bit of rush to the airport but all of us made in one piece and boarded our flight.
Overall, it was a fantastic trip and I am hoping that we will have another opportunity next year!

In Loving Memory of Gregory Paul Russo
On Sunday, the 16th October 2011, it was the 6th anniversary of my late brother's untimely death...by now I should have, at least, come to terms with his death but yet, I find myself still questioning everything that occurred building up to his death and why his murder has yet to be solved!!
My biggest regret in life is that I did not speak to him in the month prior to his death and will never hear his voice again! God, I miss him so much....x

Romantic Getaways
Scott and I love to spoil each other by booking a night or two away every now and then!
So back in August we celebrated our belated 1st wedding anniversary in Bridlington on the East Coast of Yorkshire - 3 fabulous nights and 4 glorious days in the sun!
We both felt refreshed and ready for whatever comes our way - but sad to say, within 30 minutes of arriving at the office, we both felt like we hadn't had a break at all!
Definitely time to plan our next adventure...so we decided we would go away for a night to celebrate when we first got together 4 years ago and 2 years ago, Scott proposed!
So we ended up at Heathercliffe Country Hotel in Frodsham, Cheshire - very picturous part of Cheshire set in 10 acres of farmland not far from the City Centre of Chester. The owner of hotel was so friendly, nothing was too much trouble!
We were shown to our suite which was lovely and spacious. Once we settled in, we decided we would go for a drink in the bar before getting ready for dinner. Later in the evening we were greeted in the bar and given an opportunity to have drink while deciding on what to have for dinner before being shown to the dinning room.
As we were staying over and having dinner, we were given pre-starter course which was olive, French breads, dips and olive oil with Balsamic Vinegar. Scott chose the breaded mushrooms on a bed of rocquet salad with mayonnaise while I had the breaded deep fried Brie with caramelised onion and chutney - mmm delicious!
Scott decided to have the Roast Beef and Yorkshire Pudding served with a selection of vegetables. I decided to have the Cajun Chicken in a Tortia Basket - once again, we were not disappointed!
We weren't going to have dessert but they had a dessert table in the centre of the room with a selection of tempting sweet and savoury options.
After much deliberation, Scott settled on the Lemon Cheesecake while I had Death by Chocolate Fudge Cake - every morsal was a piece of heaven.
Today, after a wonderful hearty breakfast, we checked out and decided to visit the City Centre of Chester.
Chester is a lovely city with beautiful architecture, designer stores and lovely restaurants / coffee shops / bars.
As it is only 1 hr 50 minutes drive, we will definite have to back for another visit!

Apple and Blackberry Crumble
Visited my in-laws today as my husband was helping them clear their garden and as his mom has a sore wrist, I decided to give her a hand in the kitchen.
Her neighbour gave her some wild blackberries that she had picked earlier this morning. So we decided to make Apple & Blackberry Crumple.
I peeled and slice apples and mixed them with the blackberries in an oven dish.
To make the topping you need:-
6oz self raising flour
3oz sugar
3oz butter
Mixed it together by crumbling it between your fingers until get crumbs
Then coat the apples and blackberries so that the entire dish is cover
Bake it in the oven at 180 degrees for 35 minutes or until it is golden
Serve it with custard or cream - delicious!
Now that I have both my in- laws and Scott's seal of approval - I will definitely be making it again!

Bonding with my godson
Earlier in the month, I was so lucky meet up with my friend, Nicky and her family as we haven't seen each other for so long. Nicky was supposed to have been my matron of honour but as she was expecting 2 weeks before our wedding Nicky was unable to travel.
Nicky had a beautiful little boy and was so very touched to be asked if I would be his godmother.
I finally got to meet him and he is such a precious little boy - he melted my heart and will certainly be a little heartbreaker! Xx

Celebrating our 1st wedding anniversary
As Scott had to fly to the New York on Saturday, 30th July, we decided we would celebrate our anniversary early so throughout the week, we did something special for each other!
Last Tuesday, we exchanged presents - I tried to stick to tradition and gave him a leatherbound sketchbook and a coffee table book of houses designed by Frank Lloyd-Wright. Scott gave me a pair of beautiful delicate diamond hooped earrings which I haven't taken out of my ears since he gave them to me.
So Wednesday, I made him a delicious seafood dinner - retro 70'S prawn cocktail to start and the main was my quick and easy version of paella.
My final gift for Scott arrived later in the week which was a designer businesscard holder that is slightly different to the usual designs - plus he had a little bit of bling and he could take it with him on his business trip.
On Friday, we managed to get a table at Poacher's Rest on Chatsworth Road as we have driven passed it on many occassions and wondered what the food would be like.
Upon arriving at the restaurant, we were taken downstairs to the cellar which has been converted into a lovely modern bar. While in the cellar, the waitress gave us a chance to peruse the menu and also place our order while enjoying a cheeky drink or 2.
A few minutes later, we were shown to our table on the ground floor but there is a further floor with 2 tables on the 1st floor.
Both Scott and I had the green-lipped mussels with white wine and garlic sauce served with crusty toasted bread.
For our mains, I was keen to try something different so I ordered the kangeroo fillet - absolutely delicious!!! Scott's main was the slow cooked lamb - that too was mouth-watering. Side orders were a portion of sweet summer vegetables and a portion of new potatoes with pancetta in a cheese sauce....just writing about it makes me hungry!
While enjoying our meal we shared a lovely South African bottle of Tall Horse Merlot - smooth and rich with flavour.
To end the meal, I tried the blueberry creme brulee - once again, I was not disappointed!
On the whole, we have had a fabulous 1st wedding anniversary but as we were not together on the actual day we have decided to go away for a long weekend on the coast of Yorkshire later in the month.
But for now - I am so looking forward Scott's return as he is currently waiting to board his plane xxx

Side orders were a portion of sweet summer vegetables and a portion of new potatoes with pancetta in a cheese sauce....just writing about it makes me hungry!
While enjoying our meal we shared a lovely South African bottle of Tall Horse Merlot - smooth and rich with flavour.
To end the meal, I tried the blueberry creme brulee - once again, I was not disappointed!
On the whole, we have had a fabulous 1st wedding anniversary but as we were not together on the actual day we have decided to go away for a long weekend on the coast of Yorkshire later in the month.
But for now - I am so looking forward Scott's return as he is currently waiting to board his plane xxx

Harry Potter - Deathly Hallows Part 2
Yesterday, we decided to go see the final Harry Potter - I am not going to spoil it for anyone but we both thoroughly enjoyed the movie.
The special effects were incredible - its shows how far they have come since the 1st movie 10 years ago!
Despite us being our 30's - there is something so special about Harry Potter and most ages can appreciate the humour and the lessons learnt from the storylines.
I cannot wait to get my hands on the blu-ray box set!

Simple pleasures.....
Last week while out buying a few items for our home, I found some silicone pods for poaching eggs. As I cannot ever recall having had poached eggs, I had to buy the pods and of course, the handle for the pods are sold separately, so that too, ended up in my basket.
After a lazy morning, I decided that today, I would try them out.
According to the instructions, you must coat the pods with some oil or fry light(spray 'n cook)before placing them in a saucepan of boiling water. Allow them to simmer for about 4 to 6 minutes.
Once 4 minutes had passed, I removed them from the saucepan (using the handle) and then slipped the poached eggs carefully out of the pods on to a slice of toast.
I was so impressed - the centre of my eggs were not too hard nor too running - perfect just the way I like them and of course, I scored some brownie points with Scott!

Tonight's menu
Tonight, I was very much in the mood for some Salmon so I decided to coat the Salmon fillets with a variety of herbs (basically whatever I could lay my hands on). I then baked wrapped them in tin foil and placed them in the cooker (oven) for 35 minutes at fan assisted 200 degrees.
To accompany the Salmon, I roasted tomatoes, aubergines, baby marrows, red, yellow, green peppers and onions and if that was not enough - I decided to make some home made chunky hot chips to accompany our feast. Mmmmm delicious!!!

Father's Day - 19 June 2011
I hope all the dads out there had a special father's day - sadly I didn't get to spend the day with my dad but I did get to wish him and at least he knows that I love him lots and I am very lucky to have him as my dad! X
Good news......
So last Thursday, Scott and I had the day off so that I could apply for my indefinite leave to remain in person.
What an experience - I was so nervous while sitting at the UK Border Office and you wait for my number to be called over the loudspeaker and when it does, we both were anxious and just wanted it to be over. Luckily, by 2pm, we were in back in our car beaming from ear to ear as my application was granted - next stop is citizenship!

Letters To Juliet
Yesterday, I bought the dvd, Letters To Juliet as I had wanted to see it at the cinema but never had a chance to see it.
I am fortunate to have a husband that enjoys similar movies to me - we love romantic comedies as well as action pack movies but we are not keen on watching thrillers / horror movies.
So we got cosy on our couch as it was a perfect evening for spending it in front of the television as it was very miserable outside.
The main character is Sophie, a New York factfinder of a newspaper desparate to launch her career as a writer who is engaged to a self-centred restauranter. 10 weeks prior to their nuptials and her fiance opening his restaurant, they set off on a holiday of a life time in Verona.
While in Verona, on one of the many days that Sophie finds herself alone, she enters Juliet Capulet's Courtyard where she discovers a wall of letters left by visitors that are longing for advice from the Secretaries of Juliet.
I will not divulge any further on the plot but save to say Sophie is intringed by the Secretaries of Juliet and she, too, takes part in responding to a letter that was left more than a decade old. The author of the letter soon retuns to Verona after having received Sophie's response.
The movie is set against the beautiful backdrops of Italy and the quest for love soon captures its audience.

My first attempt of making Pavlova
Last week I decided that I wanted to make a Pavlova to take to our friends on Saturday. So, after a long day at the office, not to mention doing the grocery shop and then having dinner (10 pm), I decide that the kitchen was clean and tidy to start making the dessert.
Well after an hour and a half of mixing caster sugar, cream of tartar and egg whites - I finally had stiff peaks and we even did the test of turning the mixing bowel upside just to make sure it held - safe to say that it did not fall on to the kitchen floor!
As you have to cook the pavlova at low heat for about 2 and half hours, we decided we wouldn't risk falling asleep and spent the evening watching rubbish on tv - waiting in anticipation for my first attempt to be ready!
Finally after a lot of anticipation, my pavlova was done and from what we saw, it looked amazing - I, in fact, made two in case one was a flop!
Luckily both looked perfect - but I have to admit that once the buzzer on the cooker went, my husband and I were both very relieved to know that we could go to bed!!!

Le Bistrot Pierre
Today my colleagues and I were taken to Le Bistro Pierre in Derby by our bosses - it was a real treat.
I had a double dose of beef - I chose beef carpaccio with a salad of shaved fennel, shallots and parmesan as my starter. The beef was wafer-thin - absolute perfection.
My main was rump steak with red wine and shallot reduction with dressed leaves and pommes frites - once again I was not disappointed.
They also offer a special of 2 course for £9.95 or 3 courses for £11.95 - very good value for money!

New Cooker Has Arrived - Good Times Are Coming Our Way!
Finally after more than 5 weeks without a cooker, our new cooker arrived this morning. We have gone for the same model as the previous one as it fits well within our kitchen and the previous cooker was fantastic.
The cooker is dual with a gas hob and an electric oven so for now we will be able to have a delicious meals straight from our very new oven. We will have to get our plumber back in to connect the gas but at least we will be able to use the oven.
We have been living on pasta and other meals that can either be cooked / heated on the gas hob or in the microwave.
So our first meal in the oven will be crumpets with cheese as we have yet to have breakfast when the delivery guys turned up on our doorstep. We are so grateful as they also removed our old cooker.
Mmm now I can try some new recipes that I have found recently!

Footloose
Scott and I were given tickets to see Footloose the Musical at Nottingham Theatre Royal for tonight's performance as a birthday present. We both are very excited and so looking forward to seeing the stage production.
Footloose the movie was brilliant and whenever I hear the theme tune - it takes me back to being a child when I first saw the film with my family and a very young Kevin Bacon - in fact I think Kevin was 27 when he had to portray a teenager. Of course there are a few more familiar faces in the cast - Sarah Jessica Parker for one, with very big hair before her New York transition!
If anyone loves dancing and good old fashion 80's music then Footloose is a must!

Sunday Lunch At Lakeside, Nottingham
Scott and I will be returning to the place where he proposed for Sunday lunch with our family. Pity about the weather as it would have been nice to take a stroll out to private island where he proposed.

South African Mother's Day
Well today is Mother's Day in South Africa and it is also my late brother's 37th birthday so it's a particularly special day in our family.
I wish I was with my parents today as they are celebrating Greg's life. I would have loved to have had a t-bone steak on the braai and sharing a few drinks.
Happy Mother's Day to my very brave, caring and beautiful mom and to a wonderful brother - you are never far from my heart! Xxx

London for the week
Well another long weekend draws to an end - now we just have to get through work tomorrow and then we will be on our way to London to celebrate my sister-in-law's graduation and meeting up friends and family from Canada. Pork Loin Steaks
A couple of months ago, I was going to make dinner. The only piece of meat that I had defrosted that day was Pork Loin Steaks but was bored with just the usual way of preparing them.
So I decided to use a recipe my mom-in-law had mentioned some time ago.
1. Pre-heat the oven at 180 degrees centigrade
2. Coat the pork loin steaks in either French or Wholegrain Mustard
3. Coat it again in brown sugar
4. Place in an oven dish or grill pan for 45 minutes
The pork loin steaks will be sweet and succulent. Why not serve it with Wholegrain mash potato!

Ladies night
Well, this Saturday passed, myself and 2 of my friends finally had our First Ladies night since I got married.
My 2 friends have rather hectic lives filled with husbands, 4 children between the 2 of them under the age of 6 years old and some time in the day they still manage to clean their homes and go to work!
We diarised the date about 2 months ago and then about 3 weeks ago we agreed on a restaurant - looking forward to great company, fantastic food and plenty of cheeky drinks....they arrived about 15 minutes early while I was still putting the final touches to my make-up - they were obviously eager to start the Ladies Night early.
As the restaurant we chose was within walking distance, we braved it in our high heels walking up our road and then down the road (about 10 minute walk in total) to where the restaurant is. We chose the local Italian family-run restaurant as it's so popular and it caters for everyone's taste.
It was a fantastic night, we shared a bottle of Merlot Rose and tucked into delicious starters followed by scrumptious mains of swordfish accompanied with vegetables, calzone pizza, chicken and spinach pancake - my mouth is watering just thinking of the gorgeous food! We did behave ourselves by not having a sinful dessert but we did chose to go bar hopping before we called it a night at 11.30 pm - but this time we decided to rest our feet by being sensible and calling for a cab!
As we had our Ladies Night, it is only fair to let the Boys have a night off from their wives - plus the sooner they have theirs, then we can plan our next night out!

Chicken casserole with dumplings
A couple of weeks ago we celebrated Mother's Day and invited my in-laws over for lunch but as our cooker was on the blink, I decided to use the Crockpot to cook the meal.
I chose to do a chicken casserole with dumplings.
Ingredients
7 chicken thighs
salt and freshly ground black pepper
350g (12oz) unsmoked bacon cut into chunks
1 large onion, peeled and roughly chopped
2 large carrots, peeled and cut into 2cm (1in) slices diagonally
700ml (1 1/4 pints) chicken or vegetable stock
few sprigs of lemon thyme
Optional - 2 tbsp Harvey Bristol cream sherry or any sherry you may have available
For the herb dumplings
350g (12oz) plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 tsp salt
300ml (1/2 pint) buttermilk or soured milk
2 tbsp finely chopped mixed herbs (parsley, lemon thyme rosemary, tarragon or chives)
Optional - 25g (1oz) cheddar cheese, finely grated
5cm (2in) scone cutter or a glass
Method
1. Season the chicken with salt and pepper
2. Fry the bacon in a non-stick frying pan until crispy and then remove the bacon from the pan and place on some kitchen paper
3. Add the chicken to the pan and sear it until golden and place in a separate dish
4. Add the carrots and onion and fry until the onion is soft and the carrots are soft
5. Turn the Crockpot or generic slower cooker on to a low heat and place the bacon, onion, carrots first into the slow cooker
6. Place the chicken in the slower cooker
7. Pour the chicken or vegetable stock into the pot
8. Pour the Harvey Bristol cream sherry into the pot
9. Season with salt, pepper, lemon thyme
10. Cover with lid on the warm setting over night
11. In the morning turn the temperature up to low
If you were to cook this in the oven:-
1. Preheat the over at 180 degrees centigrade (gas mark 4)
2. Return the bacon and chicken to the pan together with the onion and carrots
3. Add the stock, lemon thyme, salt, pepper and Harvey Bristol cream sherry
4. Bring to the boil slowly
5. Transfer it to a casserole dish with a lid and then bake for 20 minutes
I am not going to lie, I did not have the time to make fresh dumplings and cheated by using frozen dumplings. I placed the dumplings into the Crockpot 40 minutes before serving the chicken casserole - it was sufficient time for them expand and become moist.
If I had the time to make them, I would have prepared them as follows:-

4. Using your one hand with your fingers outstretched bringing the flour and liquid together, adding some buttermilk or soured milk if necessary
5. Don't knead the mixture as it needs to be soft, not sticky nor too wet
6. Sprinkle flour on a work surface and place the dough on the flour
7. Mix the dough into the flour until is round
8. Use a rolling pin and roll out the dough until it is about 2cm (1/2in) thick
9. Use a scone cutter or a glass to cut out 10 - 12 dumplings or divide the dough into 10-12 pieces
10. Roll each one into a small ball
11. Remove the casserole from the oven (use oven mittens) and increase the oven temperature to 230 degrees centigrade (gas mark 8)
12. Place the dumplings on top of the casserole leaving a gap for them to spread
13. Scatter the cheese over them
14. Return to the oven for 10 minutes
15. Reduce the temperature to 200 degrees centigrade (gas mark 6) and cook for a further 20 minutes until the dumplings are crispy and the chicken is cooked through

Hi all....I am origianlly from Cape Town, the Mother City of South Africa, living in Chesterfield, a historic market town. I relocated to London in the summer of 2006 after losing my brother tragically in 2005.
In less than 5 years, I have moved from Beckenham Kent (a studio flat) to Battersea (room within a house-share) and from Battersea to a beautiful terraced house in Chesterfield.
I met and fell in love with my wonderful husband, Scott, originally from Nottingham while visiting family friends for a weekend and ended up staying an extra night just so that I could catch another glimpse of him before returning to London.
While living in Battersea, I shared a house with 4 other South Africans and I have to admit that I didn't enjoy my experience in a house-share. They were not complete strangers but it was a huge adjustment for me, sharing facilities, having an allocated shower slot in the morning - heaven forbid you missed your shower slot!
After a year or so of living in and around London, I decided it was time to move away from the buzz of London for a more idyllic lifestyle.
Scott and I will be celebrating our 1st wedding anniversary later in the summer and we both are looking forward to celebrating many more!!

In less than 5 years, I have moved from Beckenham Kent (a studio flat) to Battersea (room within a house-share) and from Battersea to a beautiful terraced house in Chesterfield.
I met and fell in love with my wonderful husband, Scott, originally from Nottingham while visiting family friends for a weekend and ended up staying an extra night just so that I could catch another glimpse of him before returning to London.
While living in Battersea, I shared a house with 4 other South Africans and I have to admit that I didn't enjoy my experience in a house-share. They were not complete strangers but it was a huge adjustment for me, sharing facilities, having an allocated shower slot in the morning - heaven forbid you missed your shower slot!
After a year or so of living in and around London, I decided it was time to move away from the buzz of London for a more idyllic lifestyle.
Scott and I will be celebrating our 1st wedding anniversary later in the summer and we both are looking forward to celebrating many more!!
